When having a bout of insomnia, baking cookies with a loved one makes for a good remedy. It keeps off sleeplessness anxiety, reduces stress, and perhaps even releases endorphins to boost happiness. Where brownie is all about chocolate, what constitutes cookie is infinite. At its most basic, the cookie is a shortbread, containing flour, fat, and sugar. At its most decadence, there is the Black Gold cookie which has garnered a loyal following. It was created by Marcel Desaulniers, then the executive chef at the Trellis Restaurant in Williamsburg, Virginia.
I’ll cream my butter
while you whip your eggs
’til thick and frothy –
3-AM cookies.
Melt 2 oz unsweetened chocolate, 6 oz semi-sweet chocolate chips, and 6 tbsp butter together using the double boiler method. Alternatively, combine and heat for 10 minutes @ 280F, then gently stir with a flexible spatula until all is meltingly smooth.
In a separate bowl, whisk 2 large eggs until frothy. Whisk in ½ cup of sugar and 2 tsp vanilla extract. Add the chocolate-butter mixture while continuing whisking to blend.
Add sugar and spice
’til it’s smooth and nice,
Sprinkle on flour,
fold it like flower.
Sift together 6 tbsp flour, ½ tsp baking powder, and ½ tsp salt, and fold it into the cookie batter with a flexible spatula. Stir in another 4 oz semi-sweet chocolate chips. It is a fairly runny batter; freeze for 15 minutes before scooping by tablespoonful onto a large baking sheet lined with parchment paper. 10 minutes @ 325F, and if possible, freeze the baking sheet while the oven heats up.

These cookies are rich and indulgent. They have a glossy interior with a soft, almost melting texture, and taste like chocolate ganache wrapped in a cookie. They are amazing with vanilla ice-cream.
